So I've shared a similar recipe to this before. It is true. However, due to the fact that I do not like the photos I took of said waffles, I would much prefer it if the whole post would cease to exist. Struggles. So, with that in mind, I decided to make some tiny tweaks to the original recipe, and photograph them again. Please forgive me.
So here we are, part 2 of the gluten free oat waffles.
1 ¼ cup gluten free oats, ground to a flour
½ cup almond meal
2 tablespoons coconut oil
3 tablespoons maple syrup
½ teaspoon vanilla extract
1 teaspoon ground cinnamon
1 cup milk of choice (I used regular cows milk)
2 eggs, lightly beaten
1. In a large bowl, combine all your ingredients. Done. Waffle batter. Leave it for about 10 minutes - the oats will absorb some of the liquid and thicken up a lil.
2. Turn on your waffle maker and let it heat up according to instructions.
3. Spray each waffle iron with a bit of olive oil, and pour a quarter of the mixture in. Cook according to instructions, but have a few sneaky peeks to check they aren't burning. I often end up pulling mine out ahead of time.
4. Top with whatever you fancy. May I suggest the combination above or below?
